For one night only, Chef James Wambui invites guests on a personal culinary journey from his grandmother’s kitchen in Kenya to Bermuda, the island he now calls home.

Fire & White Roofs is a seven-act dining experience inspired by inheritance, memory and belonging, bringing together the fire-cooked traditions of James’s African heritage with the ingredients, flavours and traditions that have shaped his nearly decade-long culinary life in Bermuda.

Fire is where the story begins — representing the earliest kitchen, traditions passed through generations, and memories James carried from Kenya. Bermuda’s iconic white roof represents where that journey has led: an island shaped by rain, resourcefulness, and a distinct culinary identity. Throughout the evening, the two worlds meet through dishes including ember-roasted pumpkin and fermented millet, Bermuda day-boat fish with green coconut, tamarind and sherry pepper, a reimagining of the island’s traditional Sunday codfish breakfast, and fire-roasted goat served with his grandmother’s irio.

Meet the Chef Behind the Menu

Chef James Wambui leads the culinary programme at Cambridge Beaches. His approach to cooking is shaped by Kenya, his grandmother’s kitchen and an African relationship with fire, alongside nearly ten years spent cooking in Bermuda. During that time, the island’s ingredients, traditions, rain-catching white roofs and Sunday table have gradually become part of his own culinary language. For Chef James, food provides a way to explore inheritance, memory and place, bringing the traditions he carried from Kenya into conversation with the Bermuda he now calls home.
